Another of the jewels of the local gastronomy that visitors can discover with satisfying surprise is the cheeses of the Tenerife Island. One of its most outstanding features is its softness and the particular aroma, it gives off to announce its special taste, salty and slightly acid, that is very pleasing on the plate.
There are some local cheeses that deserve special attention, such as the cheeses of El Tanque, mature and slightly spicy and those of Arico-Fasnia, Anaga and Teno.
The craft cheese is produced with goat milk that is curdled with fresh astride rennet and later pressed. Then it can be put to other treatments depending on the specific tastes of each place. The most common ones are the smoked with almonds, nuts, wood and the curing with oil, paprika or gofio.
Between 5 and 10 liters of milk are needed to produce one kilo of cheese, for that reason it is a food rich in proteins, calcium, phosphorus and vitamins A, B and D.
