Mojo sauces are the essence of canarian gastronomy. The products used to prepare them are all natural: olive oil, vinegar, garlic, herbs, cumin, paprika, pepper, fresh herbs, parsley, coriander, all the ingredients that nowadays are included in the Mediterranean cuisine, well known for its flavor and healthy condition.
Well known is mojo picon (spicy red mojo) it is made with spicy peppers. Its basic ingredients are spicy peppers, garlic, vinegar, oil, paprika, cumin and cooking salt. Different one is mojo de cilantro (coriander green mojo). Its basic ingredients are coriander, garlic, green paper, vinegar, oil, cumin. Mojo verde (green mojo), there are many included in this denomination, even coriander sauce is sometimes called green sauce, but the softest are made with parsley. You should also try mojo cheese, almond or pine-seed mojo or saffron mojo.
